I am happy to say that I have finally been able to be on the other side of Mommy Connections – as a mom registered in one of our programs!  I am loving the West Edmonton Toddler Connections program that I am taking.  It is nice to just be one of the moms and actually be able to connect with other moms of toddlers on a new, more personal level, rather than as the President of the company.  I am just another mom in this program!  So far we have done a Kindermusik demo and had a sleep expert come in (and I personally had some crib to bed questions answered!)  Next week Madelyn and I are having our picture taken and we are learning new tips for taking photos of your kids (which I really need to pay attention to!)

One of the moms in the program brought in muffins to share with all the moms, dads & toddlers – it was so incredibly thoughtful of her and I wanted to share the recipe because they had the crunchy flax texture just like Starbucks famous banana chip bread.  YUM!

Here it is:

You will need:

1 1/2 cups quick oats 375 ml
1 cup whole wheat flour 250 ml
1/2 cup bran 125 ml
1/4 cup flax seeds 50 ml
1 tsp each baking powder & baking soda 5 ml
1/2 tsp salt 2 ml
3/4 cup granulated sugar 175 ml
3 tbsp butter, softened 45 ml
1/2 cup unsweetened apple sauce 125 ml
3 ripe bananas 3
1 each large egg & large egg white 1
2 bars (100 g) NESTLÉ NOIR 70% cocoa, chopped 2

Tools required:
Electric mixer, muffin tins

Step 1:
Preheat oven to 325˚F (160℃).  Grease 18 muffin cups or line with paper bake cups.

Step 2:
Mix oats, whole wheat flour, bran, flax seeds, baking powder, baking soda and salt in a bowl.

Step 3:
In another bowl, beat sugar and butter until creamed. Add applesauce, banana and eggs and beat well. Gradually stir in flour mixture until moistened.  Stir in pieces of NESTLÉ NOIR until moistened. Spoon batter into prepared muffin cups.

Step 4:
Bake for 18-22 minutes or until tops spring back when lightly touched.

Makes 18 servings

Nutrients per serving: about 200 calories, 4 g protein, 9 g fat, 29 g carbohydrate, 4 g fibre
