So many of us have picky eaters that would rather snack and graze all day long. If you are worried about their snacks, this is a pretty healthy one. Pair it with a glass of milk and a piece of fruit and it can easily fill in for a picky eaters breakfast (let’s be honest – maybe even lunch!) or a busy parent on the run! As per usual, I had my kitchen helper ready to go (as well as sneaking as much raw cookie dough as she possibly could!)
1/2 cup butter softened 1 cup packed brown sugar 1/2 cup canola oil 1/2 cup honey 1 tsp vanilla 3 cups rolled oats 2.5 cups flour (I used whole wheat) 1/2 cup ground flax seed (this can be usually be found in the cheese/yogurt/organic goods fridges) 1/4 cup sesame seeds 1/4 poppy seeds 1/4 cup flax seeds 1 tsp baking soda 1 tsp cinnamon 1/2 – 1 cup raisins (I used 1/2 a cup of currents plus a few mini chocolate chips!)
Cream butter and brown sugar. Beat in eggs. Add in oil, honey, vanilla and then the remainder of the ingredients.
Make 1/4 cup balls out of the dough and place on a cookie sheet. They don’t spread out very much, so I would pat them down a bit. Bake at 375 for 20 minutes. Makes approximately 24 large cookies. Freezes well!
