There is nothing that makes me smile more on a Sunday than knowing that I have meals figured out for the week. Make those healthy meals and that they’re for ME – and I’m ecstatic! As a working Mom of two, I spend a TON of time on meal planning and prep for my kids, but my own meals often take the back seat. On busy days I typically either don’t bring anything for myself to eat, or I just make do with whatever I’ve made for the kids, which doesn’t always fit in with my own tastes or preferences (my kid’s current faves are jam sandwiches and plain buttered noodles, enough said!).

When our delivery arrived on a Sunday night, my husband and I unpacked the refrigerator cooler bag that they were delivered in and planned out what salad we were going to eat on which day! It added some interest to lunch time, I found I was looking forward to my packed lunch which isn’t how I always feel.
