Toddlers can be picky creatures. And if you’re anything like me you want to start your little one’s day off right with a healthy, hearty breakfast that you can both feel good about. My 2 year old loves these and requests them daily!
Our family I have been trying mightily of late to eliminate packaged foods in our home. And instead relying on my culinary creativity. Below is my favourite pancake recipe that I have recently mastered. This version is dairy free.
2 cups wheat flour
2 cups hemp milk *
2 eggs
1 1/2 tbsp. coconut oil, melted + extra for cooking
1 tsp coconut sugar
1 1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla
*any milk should work just fine here
To make homemade hemp milk combine 1 cup of hemp seeds with three cups of water in blender. To sweeten hemp milk add 2 medjool dates – soak in boiled water before adding – and blend with water and hemp seeds. Store extras in fridge.
Instructions
1. Combine dry ingredients in a large bowl and set aside.
2. Mix wet ingredients well in medium-sized bowl and combine with dry.
2. Melt additional coconut oil in a sauce pan on medium heat. Flip pancakes when they rise up. Approximately 5 minutes per side.
3. Enjoy with your favourite toppings: maple syrup, berries, coconut flakes and more!
We almost always have extra batter, which is great for at least a few extra breakfasts. Just store in a wide mouth mason jar or glass tupperware container in the fridge.
Happy eating!
