The month of May has been a whirlwind of marathon entertaining – 7 times during the month, we hosted dinners with at least 2 extra guests and as many as 10 extra guests! Last weekend I was feeling less than creative when trying to figure out what we would make for dinner. We bought a new BBQ this year, so I knew it was probably going to be something grilled! As usual, I went to pinterest for answers!
I came across a bunch of stuffed burger recipes. I adapted this one for the 9 people having dinner with us and ended up making 20 burgers.
5lb ground beef (we used ground sirloin and it was really good!) 3/4 cup BBQ sauce 2 handfuls (about 20 crackers) of Ritz Crackers crushed up 2 eggs Seasoning (I used Montreal Steak Seasoning, Salt and Pepper) Grated Cheese 10 pieces of cooked bacon chopped into small pieces
Step 1 – Prepare cookie sheets with foil (for easier clean up!) This is where you will lay the patties when they are done.
Step 2 – Mix (with your hands!) the first 5 ingredients above. This is a pretty wet mixture.
Step 3 – Form thin patties around the size of the palm of your hand. I made 20 patties in this step.
Step 4 – add about 1.5 Tbsp of grated cheddar cheese (or other type of cheese if you wish) and a small amount of bacon onto the centre of each patty
Step 5 – make 20 additional patties and place them on top of the original patties that have the toppings. Close the sides so the cheese and bacon are enclosed. This will also help the burger not to fall apart on the grill, which we didn’t have any trouble with.
Step 6 – BBQ them and enjoy! We ate 13 burgers the first night and I froze 8 patties on the cookie sheets and then transferred them to a ziplock with pieces of wax paper in between.
