Method
Preheat oven to 180°C/350°F. Oil the base of a large casserole dish (at least 2 ½ Lt large).
Steam broccoli and cauliflower for 4-5 minutes. If fresh veggies aren’t available, use 4 cups of frozen mixed vegetables as a substitute.
In a saucepan melt butter over medium heat. Slowly stir in flour for about one minute or until mixture turns a blonde colour. This is called a roux. Gradually whisk milk into roux to prevent lumps from forming then add salt and pepper. Bring mixture to a simmer and keep stirring until sauce thickens.
Add meat, ½ of the cheese and all steamed veggies into sauce. Pour sauce into casserole dish and then top with the rest of the cheese and breadcrumbs. Bake for 20 minutes or until the top of the dish is evenly browned and the mixture is warmed through.
