Valentine’s Day Treat: Mini Strawberry Cheesecakes (Recipe)

Looking for a fun homemade Valentine’s Day idea?   This Valentines day recipe requires minimal prep, it’s somewhat healthy, and absolutely delicious!   Mini strawberry cheesecakes are a treat that the whole family will enjoy!

 You’ll need:

  • 24 ripe strawberries, hulls removed
  • 250ml light cream cheese
  • 3 tablespoons icing sugar
  • 3 tablespoons brown sugar
  • 1  teaspoon vanilla
  • 1/4 cup graham cracker crumbs

1. Place cream cheese in a bowl and microwave for 30 seconds, or until soft. Combine the cream cheese, vanilla, and sugar.

2. Use a sharp knife to make a hole in the center of each strawberry (going as deep as you can without hitting bottom).   To make it even easier…I bought a cute Strawberry Huller at Kitchen Stuff Plus.

3. Using a cake tip, pipe the filling into each hole. You can also just spoon it in, but it won’t look as fancy!

4. Sprinkle graham cracker crumbs on top, or let your child dip the tops of the strawberries into a shallow plate containing the crumbs.

 ENJOY!!
